Ripening Stages of Aseel Dates:

1.Kimri(unripe-green in color),

After Date pollination ( which is carried out manually as it doesn’t occur naturally), the first Date ripening stage is called Kimri. It is first stage of the four Date ripening stages. Color of the Date stage remain green which not 

2. Khalal (full-size, crunchy): 
Khalal is second stage of Aseel Date ripening where color of the Date change from green to yellow. Other yellow Dates like Barhi Dates can be eaten at this stage because these are sweet and crunchy. However, Aseel Khalal Dates can not be eaten at this stage also because Aseel Khalal Date is not much sweet rather it is mixture of sweet and bitter gourd taste.
